![]() ![]() If seeing the chocolate and marshmallows has you craving Rocky Road but you don't have an ice cream maker, you can make the marshmallows and chocolate as directed and use the Eagle Brand no-churn recipe as the base. So you can use sliced Jet Puffs or if you like the smaller marshmallows, just throw in a lot of them. For the marshmallows, I like the texture of sliced large marshmallows. We always have roasted almonds, so I coat the almonds with melted dark chocolate, freeze, then chop and add to the ice cream. The best thing about homemade Rocky Road ice cream is that you can tailor the nuts and marshmallows to fit your mood. This is an optional step, which I've been skipping lately. It also keeps the frozen ice cream a bit softer so it's easier to scoop. The ice cream is perfectly fine without it, but if you want to trick yourself into thinking you have more ice cream, the Cool Whip adds some bulk. To lighten the recipe further, you can stir in half tub of Cool Whip. I made the first batch with cream, but for subsequent batches I used half & half and enjoyed it just as much. The ice cream is pretty rich, but you can lighten it a bit by using half & half instead of cream. Update: I recently tried just putting all of the ingredients in the blender and it worked! You really don't have to warm the cocoa powder and condensed milk mixture. For such an easy ice cream, this one is surprisingly good. You then freeze in your ice cream maker before adding chocolate covered almonds and marshmallows. Let it cool, then combine with cream (or half & half), evaporated milk and vanilla and blend until frothy. To make this ice cream, you briefly warm condensed milk and Dutch process cocoa powder over the stove and stir until smooth. As a bonus, this recipe is easy and doesn't take very long. Chocolate covered almonds and marshmallows make it Rocky Road, and Dutch processed cocoa gives it a flavor similar to Blue Bell's. This ice cream combines elements of both. The base will get a little melty while blending, so this will allow it to firm up to the perfect scoop-able consistency.Advertisement I love Rocky Road ice cream, but there's also a special place in my heart for Blue Bell's Dutch Chocolate. Layer ice cream > mix-ins > more ice cream > more mix-ins.You will need to stop and scrape down the sides frequently. Add a little extra coconut cream or milk if necessary (but try reeeeeeally hard not to!). The next day, blend the coconut cream cubes with cocoa powder, maple syrup, vanilla, and salt.Or mini muffin pans work too, silicone is ideal but metal will work. This recipe is no-churn and dairy free, as long as you buy vegan mini marshmallows it’s easily vegan, and if you use my favorite Easy Vegan Fudge Brownie recipe for the chunks it’s gluten-free too. So even if you’re not a rocky road person ( which…why?), you need this easy chocolate blender ice cream base in your life with whatever mix-ins you do love.
